You need:

  • 3/4 glass of Olive oil
  • 2 chopped onions
  • 2 diced carrots
  • 2 slices stalks of ribbed selery
  • 2/3 chopped leaves of italian cabbage
  • 3 glasses of cooked white beans
  • 1 chopped bunch of parsley
  • 1/4 glass of tomato puree
  • 1 leaf of chard
  • salt and pepper

 

Italian vegetable soupIn a big pot on medium heat warm up half a measure of olive oil, add an onion, carrot, celery and fry stirring for the next 10 minutes. Add the rest of olive oil, chard (white beet), cabbage, some salt and pepper and stir the vegetables until soft but beware not to burn it. Next, add tomato pure and cooked beans with brine lightly mash the beans and add some water but not too much as all needs to take consistency of stew. Season the soup to taste and cook until all vegetables are soft. Serve the soup very hot.
